Old vines over 30 years old located in the town of Parnay, with a sandy-clay terroir. The later are 100% grass.
Vinification & ageing :
Harvesting is done manually. The wine comes from an alcoholic fermentation by hot maceration. The latter is elaborated using the technique of punching in a thermoregulated stainless steel wine guard. After draining, malolactic fermentation follows. Then is breeding in barrel and amphora for a period of 12 month.
Tasting notes:
This wine has an aromatic richness, which translates into cooked black fruits and notes of spices. Its roundness in the mouth is completed by supple and silky tannins with a nice length in the finish. It goes perfectly with game, grilled meats and a good roasted Camembert.
It goes perfectly with game, poultry or a sweet and sour dish.
