Old vines avec 30 years located in the town of Parnay, withe a sandy-clay terroir. The latter are 100% grass.
Vinification & ageing:
Harvesting is done manually. The wine comes from an alcoholic fermentation by hot maceration in thermoregulated stainless steel tanks. After draining, malolactic fermentation follows. Breeding lasts 10 months in barrel of 1 year.
Maceration for twenty days, alcoholic fermentation in thermo-regulated stainless steel vats and maturation in stainless steel and barrique vats.
tasting:
Open and woody nose, a fresh and gourmet mouth with raspberry aromas. We will find soft tannins and a slight length at the end of the mouth. It goes well with simmered meats as small grills.
